my favorite sourdough tortillas
using discard or sourdough starter
here’s what you’ll need:
100g active sourdough starter or dicard
100g filtered water
210g unbleached white flour
10g sea salt (click here for what I use)
30g ghee — butter works, too (click here for what I use)
rise time: 1-hour+
cook time: ~20 seconds each side of tortilla
total time = 1-hour & 15-minutes
recipe makes 10-12 tortillas
DIRECTIONS
start with adding water & starter (or discard) to a bowl. give it a good mix.
then, in whatever order, add the remaining ingredients.
mix into dough & set aside for 1-hour+ (longer it sits, more tortillas you will get out of it) — I typically let it set for 4-hours, but have also instantly made tortillas and it worked as well. They just get less bubbly when cooking if they don’t ferment/double in size.
flour surface & start slicing your dough into pieces (usually makes 10-12 tortillas)
thinly roll out each tortilla & transfer into pre-heated skillet. I prefer to oil mine with bacon grease, but any high-heat friendly oil works!
MAKE SURE THE PAN IS HOT!
let the tortilla cook on each side (~20 seconds or until it bubbles) then flip.
repeat for each tortilla & enjoy!
