my famous overnight oats

When I tell you I eat this for breakfast every single morning, I’m not lying. Who would have thought that so much creativity could come from a bowl of oatmeal? The type of nut butter, fruit, protein flavor, the list goes on and on. Okay yeah I suppose I might be a little bit obsessed with this recipe…I can’t help it. I have searched to find filling and nutritious breakfasts before, but nothing replenishes my body after a workout, and keeps me full until lunch quite like this. If I haven’t convinced you yet, feel free to read over the recipe and see how simple it is to make + grab in the morning.

in a mason jar:

  • 1/3 cup quick 1-minute oats

  • 1/2 cup unsweetened almond milk

  • 1/2 tsp chia seeds

  • roughly 1 serving of protein powder (I used pea protein)

  • cinnamon (if desired)

  • 1/2 mashed banana (can substitute for 1/4 cup unsweetened applesauce)

  • 4 drops liquid stevia

mix all ingredients together, put on the jar lid and that’s it!

topping options pictured: peanut butter, 1/2 banana, strawberries, blueberries, cacao nibs, unsweetened coconut, and extra cinnamon.

I typically do about 4 jars at a time so I can have breakfast for nearly the entire week. In my experience, you don’t have to worry about it going “bad” in the fridge throughout that duration of time. This also helps when meal prepping and buying groceries since I know I need to purchase ~3 bananas to last me 7 days/6 jars of overnight oats worth (since each jar requires 1/2 mashed banana).
