chocolate chip cookies
that reduce PMS symptoms (thank you, stearic acid) + overall inflammation
here’s what you’ll need:
Wet ingredients:
1 cup coconut oil
1 tsp vanilla
2 eggs
3/4 cup coconut sugar
Dry ingredients:
2 1/2 cups unbleached white flour (I prefer King Arthur)
1 tsp baking soda
1 tsp cinnamon
pinch sea salt
dark chocolate chips
rise time: none
cook time: 10 minutes
cook at: 350 degrees
recipe makes: 24 cookies
DIRECTIONS
start with adding wet ingredients to a bowl & mixing well — coconut oil should be somewhat solid…that’s okay!
once mixed, fold in your dry ingredients + dark chocolate chips (I eyeball this amount).
scoop onto a cookie tray — using a medium-size scoop, this will make 24 cookies…unless you prefer eating the dough, like me!
bake at 350 for 10-minutes & enjoy!
