chocolate chip cookies

that reduce PMS symptoms (thank you, stearic acid) + overall inflammation

here’s what you’ll need:

Wet ingredients:

  • 1 cup coconut oil

  • 1 tsp vanilla

  • 2 eggs

  • 3/4 cup coconut sugar

Dry ingredients:

  • 2 1/2 cups unbleached white flour (I prefer King Arthur)

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • pinch sea salt

  • dark chocolate chips

rise time: none
cook time: 10 minutes
cook at: 350 degrees
recipe makes: 24 cookies

DIRECTIONS

  1. start with adding wet ingredients to a bowl & mixing well — coconut oil should be somewhat solid…that’s okay!

  2. once mixed, fold in your dry ingredients + dark chocolate chips (I eyeball this amount).

  3. scoop onto a cookie tray — using a medium-size scoop, this will make 24 cookies…unless you prefer eating the dough, like me!

  4. bake at 350 for 10-minutes & enjoy!
